Bite Me Monday: Chocolate Peanut Butter Banana Bites

Well it’s Monday again, just like clockwork.  But there is no need to just slog through the day. Chocolate peanut butter banana bites from delish.com  are they perfect way to take a drab Monday and add some smiles!  We’ve got this easy recipe along with which supplies you’ll need below, or you can watch the video tutorial here!

Supplies Needed: Chocolate Peanut Butter Banana Bites

Ingredients

  • 1 cup semi-sweet chocolate chips
  • 2/3 cup smooth peanut butter
  • 2 teaspoons coconut oil
  • 2 bananas, sliced into 1″ rounds
  • Flaky sea salt

Instructions

  1. Line a large, rimmed baking sheet with parchment paper.
  2. In a medium bowl, heat chocolate in 30 second intervals until melted.  Heat peanut butter for 15 seconds in microwave or until runny.
  3. In a medium bowl, mix chocolate and coconut oil until combined.
  4. Into small baking cups, add teaspoon-sized scoops of chocolate.  Top with a slice of banana, a teaspoon-sized scoop of peanut butter, and another scoop of chocolate.  Repeat until you have used up all of  your banana slices.  Top with a pinch of sea salt.
  5. Place tray in freezer for 2 hours, or until frozen.  Serve.

Bite Me Monday: Caramel Apple Cinnamon Rolls

Happy Monday!  Here in Central Indiana, the temperatures are already starting to drop and you can feel fall coming in the crisp mornings.  And you know what fall means, right?! S’mores, pumpkins, and apples! Let’s kick off fall with a delicious breakfast recipe: Caramel Apple Cinnamon Rolls from the Little Spice Jar!

Caramel Apple Cinnamon Rolls

Supplies Needed

Central is here to make this recipe even more simple! Here’s exactly what supplies you’ll need:

Ingredients

  • Dough Ingredients:
  • 1/4 cup salted butter or clarified butter (ghee)
  • 3/4 cup milk (I used cow’s milk)
  • 1/4 cup water
  • 3 1/4 – 3 3/4 cup all purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 envelope ‘rapid rise’ or instant yeast (approx. 2 1/4 teaspoons)
  • 2 tablespoons powdered milk
  • 1 egg, room temperature
  • Caramel Apple + Cinnamon Sugar FIlling:
  • 2/3 cup light brown sugar, packed
  • 1 1/2 tablespoons cinnamon
  • 1/4 teaspoon nutmeg
  • 5 tablespoons [b]salted[/b] butter, softened
  • 1 large granny smith, cored and finely chopped
  • 1/4 cup chopped pecans (optional)
  • 3/4 cup caramel sauce

Instructions

To make the cinnamon roll dough:
  1. In a medium microwave-safe bowl, combine the milk, water, and butter. Heat on high for 1 minute, remove and stir. Continue to heat in 30 second intervals, stirring after each, until the butter melts and the milk is warm. If the milk is hot, allow the mixture to sit on the counter for a few minutes. You want it to be warm to the touch before you proceed.
  2. In the bowl of an electric mixer fitted with the dough hook attachment, add 3 cups of flour, sugar, salt, powdered milk, and the yeast. Add the warm milk mixture and the egg. Beat on medium-low speed to combine. If the dough is sticking to the sides of the bowl, add the remaining flour, 1/4 cup at a time, until the dough begins to pull away from the sides and form a ball. I needed the entire 3/4 cup for my dough. Continue running the dough in the machine for another 5 minutes on the medium-low speed setting. Remove dough from hook and cover with dough (just the doughs surface) with plastic wrap. Let dough rest for 10-15 minutes.
To make the cinnamon brown sugar:
  1. In a small bowl, whisk together the brown sugar, cinnamon and ground nutmeg until combined.
To make the caramel apple cinnamon rolls:
  1. When the dough is ready, turn it out onto a lightly floured work surface. With a floured rolling pin, roll out the dough into a 14×10 inch rectangle. (you can trim the edges with a pizza cutter if you want the dough to be a perfect rectangle). Using a small spatula, spread the softened butter out evenly over the entire surface of the dough. Sprinkle evenly with the cinnamon brown sugar mixture. Top with apple and pecan pieces. Drizzle 1/2 cup of caramel sauce on top. Roll up the dough tightly, cut into 12 even pieces and place in a lightly greased 9-inch round or 13 x 9 rectangle pan*. I used dental floss to cut my cinnamon rolls, it’s easier than using a knife.
  2. Loosely cover the rolls with a towel and allow to rise in a warm, dark place for 20-25 minutes. If you have the time, allow them to sit for 35 minutes, that’s even better. [b]Here’s a tip:[/b] heat a 200 F degree oven, Turn the oven OFF and place the rolls inside oven and allow them to rise. It’s the perfect little trick to get them to rise in 20 minutes.
  3. When dough has risen, uncover the dish. Place a rack near the middle of the oven and preheat the oven to 350 degrees F. Bake the caramel apple cinnamon rolls for 15-18 minutes or until the rolls are golden and cooked through. Remove and let cool on a wire cooling rack for 5 – 10 minutes. Drizzle with the remaining caramel sauce and serve warm. Serve with additional caramel sauce or powdered sugar.

Notes

If you bake these cinnamon rolls in a 9-inch round pie pan only 11 of the rolls will fit. 12 rolls fit in a 13 x 9 rectangle pan. Also, you can bake these in muffin pans to get individual caramel apple cinnamon rolls.

Bite Me Monday: Homemade Mounds Bars

It’s time to bite back at Monday with this week’s Bite Me Monday recipe! This week we’ve got an easy to make treat that does not require a heap of ingredients or tons of equipment; Homemade Mounds Bars from Handle the Heat with Tessa Arias.  Monday doesn’t have to be a drag, take a bite out of it and smile!

Supplies Needed: Homemade Mounds Bars

  1. 8 X 8 inch baking pan
  2. Mixing bowl
  3. Small microwave safe bowl
  4. Rubber Spatula
  5. A fork

Ingredients

  • 3 cups unsweetened shredded coconut
  • 1/2 teaspoon flaked sea salt
  • 2/3 cup sweetened condensed milk
  • 10 ounces bittersweet chocolate, melted

Instructions

Line an 8×8-inch baking pan with parchment paper or tin foil. Spray with nonstick spray.

In a medium bowl mix together the coconut, salt, and condensed milk until combined. Press mixture into prepared pan and spread into an even layer with a rubber spatula. Freeze for 15 minutes, or until slightly hardened.

In a small microwave-safe bowl melt the chocolate in 15-second bursts in the microwave, stirring between every burst, until smooth.

Remove coconut mixture from pan. Cut into 1-inch bars. Dip the coconut bars in the chocolate, turning to coat with a fork. Let excess drip before placing on a parchment-lined baking sheet. Place mounds bars in fridge until chocolate has set. Bars can be kept in the fridge for up to 4 days

Bite Me Monday: S’mores Krispie Treats

Mondays can be tough. You enjoyed a great weekend and now it’s back to the hustle and grind! Give yourself something to look forward to tonight with a new 15-minute, easy and delicious recipe. Take a bite out of S’mores Krispie Treats from Renee’s Kitchen Adventures!

Supplies Needed

This is one of my favorite dessert recipes because it is so quick, easy, and delicious! Central is here to make it even easier! Here’s exactly what supplies you’ll need:

 

Ingredients

3 TBS unsalted butter

pinch of salt
5 cups mini marshmallows, divided
6 – 7 cups Graham cereal pieces
3 – 1.55 oz. Hershey’s® Milk chocolate bars, broken into pips

Instructions

Spray a 9″ x 13″ pan with cooking spray. In a large stock pot, melt the butter and salt over medium heat. Once it is melted, add 4 cups of the mini marshmallows and stir until they are completely melted.
Take mixture off heat and add in the cereal and stir. Add in the extra cup of mini marshmallows and stir to just combine.
Working quickly, pour half the mixture into the prepared pan and press down then top with half the Hershey’s pips. Pour the rest of the mixture onto the chocolate and press down then top with the rest of the chocolate.
Allow to sit at room temperature for several hours to set up OR place in refrigerator for about an hour.
Remove from pan and cut into bars.
Yield: 24 servings
Prep Time: 00 hrs. 10 mins.
Cook time: 00 hrs. 05 mins.
Total time: 15 mins.
