Tuesday Tip: Coffee Brewers and Vessels

I like to argue that coffee is one of the greatest joys in the world, and it’s an easy topic to argue while I type up this post, taking periodic breaks to sip on my third cup of the morning. For many, myself included, coffee is a morning ritual that sets the standard for each and every day. And today is shaping up to be a great day.

It comes as no surprise, then, that coffee is a constant on menus across the globe. From chic coffee houses to the hole-in-the-wall tavern on the corner of Sketchy and Main, every type of operation offers coffee. That’s why it’s important to make sure your coffee brewer is the right one for your needs.

Not every coffee brewer is created equal. They come in a variety of styles and features, and the right one for your type of operation may not be right for another. It’s important to ask yourself before committing to a certain type, how much coffee do you serve on a daily basis? If it’s a lot, consider an automatic brewer with a high capacity. Not so much? You may only need a small capacity pour over type.

What’s the difference between pour over and automatic? I’m glad you asked!

The main difference is a water connection. Pour over coffee brewers are great for serving coffee in low volume, requiring water to be poured in. Since they don’t require a water line, they are easy to transport. Automatic coffee brewers, on the other hand, are best if you’re serving up large quantities. They require a water connection that allows for a constant supply.

Now let’s talk vessels.

Decanters are great for individual serving, holding a smaller amount of coffee. They pair well with brewers that feature warming plates, retaining heat for extended periods of time.

Airpots are great for storing larger capacities that need to retain their heat for long periods of time. These require brewers capable of pouring directly into them, perfect for catering events or self-serving operations.

Thermal carafes do the job for individual serving as they hold coffee in smaller capacities. They’re durable and often aesthetically pleasing, fitting perfectly with the farm to table theme. They are great for temperature retention also, capable of sitting out for long durations without needing placed on a hot plate.

Types of Coffee Beans and Roasts

Coffee coffee coffee – we just can’t get enough of it, right? Whether you run your own coffee shop, or just like to make your own at home, it’s important to know the types of coffee beans so you can make the best cup of Joe! There are several factors to consider that affect the coffee flavor, including the bean type, the region it was grown in and the roast type.

Types of Coffee Beans

The two types of coffee beans you’ll find more than any other variety are the Arabic bean and Robusta bean. These are the most common in their pure form or in coffee blends.

Over seventy percent of all coffee beverages are made with the Arabic bean. The Coffee Arabica bush is grown all over the world, and dTypes of Coffee Beansepending on the region, creates a difference in taste. Soil, temperature, weather and vegetation all play part in the flavor of a bean. “For example, Ethiopian Arabica beans are known for their smooth, easy flavor with a floral finish while Kenyan Arabica beans have a more bitter taste. Arabica beans grown in Latin America are also slightly bitter tasting with a cocoa flavor and nutty finish. The favorite Arabica beans grown in Colombia are very bold in taste with a dark texture and walnut after taste,” explains Coffee.org.

Robusta beans are primarily grown in Brazil, Vietnam and Africa. This type of bean has twice the amount of caffeine than the Arabic bean, and less oil which leads to a more bitter taste. Robusta beans can be found in coffee blends and good espressos. Instant coffee and canned coffee grounds also often contain a blend of Robusta beans.

Roast Types

Did you know that when coffee beans are first picked, they’re actually green? This is to ensure maximum freshness before they are roasted. Coffee beans cannot be used until they are roasted properly, and there are several varieties of roasts to know about!

This type of roast is preferred for those new to coffee because of it’s mild taste. Light Roasts are light brown in color and have no oil on the surface of the bean because it’s not roasted long enough for the oil to break the surface.

Popular light roast names include Light City Roast, Half City Roast, Cinnamon Roast and New England Roast.

Medium Roasts

For a stronger flavor profile, coffee consumers can go with a medium roast. This type of roast still has a non-oily surface but medium roasts have a more balanced flavor, aroma and acidity. Medium roasts are more preferred in the United States, often being referred to as the American roast.

Popular medium roast names include City Roast, American Roast, Breakfast Roast and Regular Roast.Types of Coffee Beans

Medium – Dark Roasts

Medium – dark roasts have a rich, dark color and have some oil on the surface of the beans. This type of roast has a heavy body, and the flavors and aromas of the roasting process become noticeable. Medium – dark roasts sometimes have a spicy taste.

Popular medium – dark roasts are called Full-City Roast, After Dinner Roast or Vienna Roast.

Dark Roasts

Dark roast beans are shiny because of oil present on the surface of the bean, which you can sometimes see in the cup when the roast is brewed. This type of roast is dark brown in color, with a bitter and smoky or even burnt taste. The flavor of the coffee bean’s origin is overpowered by this style of roasting process and the amount of caffeine in usually decreased. Dark roasts are used for espresso blends.

Popular dark roast names include French Roast, Italian Roast, Espresso Roast, Continental Roast, New Orleans Roast, High Roast and Spanish Roast.

YouTube to Debut Their Own Food Channel, HUNGRY

As part of their plan to launch approximately 100 new channels, YouTube will debut a new food-focused channel titled, “HUNGRY,” on July 2.  The channel, which mixes how-to videos with celebrity-driven shows, will consist of videos that run about one to three minutes long.  With new episodes posted weekly, YouTube hopes to have about a dozen in the series by the end of the summer.

YouTube is employing former television veterans to engage the audience; former executive at Food Network and the Cooking Channel, Bruce Seidel, is overseeing the launch of HUNGRY, and Duff Goldman, lead cake man from TV reality show, “Ace of Cakes,” will have his own program, “Duff’s Food World,” as well as serve as a talent and programming consultant for the channel.

“Basically, the cooking show on television is almost dead,” Goldman said.  “When you look at the programming…you kind of find that everything is being replaced by travelogues, competition, reality.  There is not a lot of instruction.”

Other series are also in the works for “HUNGRY.”  A pair of Brooklyn brothers/musicians/underground caterers are the focus in “Brothers Green,” while “Casserole Queens” focuses on a pair of Austin-based women who love retro food and entertaining.  Read the full article on HuffingtonPost.com.

Batali, world-renowned chef and owner of 10 New York City-based restaurants, isn’t one to say no to seconds when it comes to food.  Just taking a glance at the man, and you see a portly, jolly Italian man with a belly that clearly shows how much he loves his food.

But this week, he, his wife and two teenage sons have chosen to participate in a challenge given to New Yorkers by the Food Bank of New York City.  The task is simple, but definitely not easy—to eat and survive as if they were a family of four living on food stamps.  Total amount one would receive from the Supplemental Nutrition Assistance Program (SNAP)–$31.00 per week.

Batali isn’t doing the project to receive attention for himself; he’s  actually trying to open America’s eyes to  the government’s plan to cut $38.5 billion from both the Farm Bill and  other food stamp  programs.  Read the full article on shine.yahoo.com.

Two Cups of Coffee Cuts Risk of Dying by 10 Percent, Study Revealed

A recent study conducted at the National Cancer Institute and published online in the May 16 issue of the New England Journal of Medicine has discovered that coffee drinkers (drinking either regular coffee or decaf) were less likely to develop cancer, have heart issues or have a stroke.

The strongest showing was found among women who had four or five cups a day – they had a 16 percent lower risk of death.  The study also found that although coffee drinkers were less likely to die from heart or respiratory disease, stroke, diabetes, injuries, accidents or infections, there seemed to have no effect on cancer deaths.  Read the full article on cbsnews.com.

Fast-Casual Chains Strengthen, Led By Panera, Five Guys

It seems fast-casual chains are strengthening their gains in the restaurant industry, as they grew 8.4% in 2011, versus the growth for the Top 500 U.S. chains, which came in at 3.5%.  The findings are reported in the Technomic Fast-Casual Top150 Chain Restaurant Report.

“Fast-casual operators continue to outshine every other segment within the U.S. restaurant industry, “ said Darren Tristano, executive vice president of Technomic.  “People want fast, fresh, quality meals at a fair price point.  This segment seems to hit that sweet spot right now.”

The largest fast-casual segments and leaders within certain segments are listed in the report; two of the segment leaders, Panera Bread and Five Guys Burgers and Fries, stood out among the rest due to their increase in sales, at 10.1 and 32.8 percent.  Read the full article on qsrmagazine.com

Family Locked in Restaurant for Skimping on Mandatory Tip

A Houston, Texas-based family paid the ultimate price when they were locked in a restaurant after refusing to pay the restaurant’s mandatory 17 percent tip.

The Marks family claimed that after being treated disrespectfully by the staff, not having drinks refilled, and generally receiving overall terrible service, Jasmine Marks asked to speak with the manager to see if she could have the automatic gratuity taken off the tab.  Marks then claims the staff locked the doors and refused to allow the family to leave unless they paid the tab or spoke with the police outside.  Marks also said the police officer told her he couldn’t answer her question regarding the legality of the situation.  She and her party eventually paid the tip in order to avoid any other confrontation.  Read the full article on kypost.com.

Ten Tips for a Healthy Black Friday

Black Friday, the day after Thanksgiving, marks the beginning of the holiday shopping season and is one of the largest shopping days in the United States. While still being in tough economic times, the Black Friday 2010 website estimates the number of shoppers to increase 5 million more than last year. This event draws in shoppers to malls and department stores all over and while many plan ahead for the sales, they aren’t planning ahead for staying healthy. Here are ten tips for staying healthy for this year’s Black Friday shopping spree.

1. Drink a full glass of water before eating breakfast.  This Oregon Health and Science University article reveals a report that says middle-aged adults who drank two cups of water before eating consumed less calories. This will help you stay fuller throughout the day.

2. Take advantage of the extra exercise you will get from walking all day with full bags on each arm. Don’t let yourself justify a giant cookie just because you have been walking all day.

3. Eat slowly.  Discovery Health says when eating, your brain gets signals from your stomach and intestines you are full—but it takes about 20 minutes for those signals to get there.  By eating slowly, you give those signals a chance to register.

4. Fight cravings and temptations by chewing a piece of gum.  This Livestrong article shows chewing a piece of gum can decrease cravings or can at least be an occasional substitute for unhealthy snacks—which you will be tempted with all day.

5. You may have heard eating several small meals during the day will help you lose weight. While it is true, there are many “small” food items that are anything but small when it comes to nutritional value.  Don’t be fooled by something’s size. For example, some muffins can have 500 calories! Be prepared and bring a few healthy snacks for the day instead.

6. When hitting up a coffee shop, steer clear from the high calorie drinks. Skip the whipped cream and go for the skim milk instead of whole milk.  This Suite 101 article includes many great tips for making healthy choices at Starbucks that can be applied to any coffee shop.

7. There are candy bars and chips at the check-out. Pretty convenient, right? Well the store strategically placed them there because they know you will throw it in during checkout. Don’t let an impulse buy ruin your progress!

8. Chinese and pizza are food court favorites but can be a nightmare to eating healthy. It is possible to eat healthy in the food court, but it doesn’t involve a full container of orange chicken and fried rice. This blog by Kristie Leong gives excellent tips for not letting your food court lunch be a disaster to your diet.

9. Do eat. It can be easy to forget about food when you hit the ground running for all the great sales. But if you don’t eat, hours later you’re going to run out of energy.  Not feeling well could put a damper on your shopping trip

10. Plan. You probably planned your trip—which stores to visit, what’s on sale, coupons, etc. Take a few minutes to plan the food involved in your day.
